Grilling is a cooking method that involves applying dry heat to food from below, above, or sides. It is often presented as a healthier way to cook without the use of oil. But it can result in drier food because the natural oil and juices were lost during the cooking process.
So what is a grill pan? It's basically like a frying pan that has grill lines all over the interior surface to mimic a barbeque grill. The grill pan is an excellent alternative to indoor cooking, especially in urban homes with no backyards and outdoor space for a cookout. Handles are vital when it comes to choosing the right grill pan. Most are designed to be in proportion with the size and weight of the pan. Longer handles might add a bit of weight on the pan, but it gives smooth mobility to the user.
Some have tabs or "helper handle" on the opposite side to assist in lifting heavy pans. You might want a shorter handle for convenience, but it's better to keep your hand from burning.
The best material for grill pans is cast iron. It may be heavy but it retains heat effectively. For a lighter choice, stainless steel or die-cast aluminum can be an alternative, which does the grilling job as well.
Cast iron surfaces come in coated or preseasoned with enamel that can last longer and give a better food release. It retains heat efficiently even at high temperatures and it's easy to clean. Just don't forget to reseason it after use and store it properly to prolong its life.
On stainless steel or die-cast aluminum grill pans, a non-stick coating is preferred for easy cleaning. Although, it may not retain heat as well as cast iron grill pans and cannot mimic the pronounced char-grill marks most of us look for, it's still a good alternative.
The same thing with the interior surface, cast iron grill pans have enamel outer material, which makes it easier to clean. Some stainless steel or die-cast aluminum grill pans come with an induction-ready bottom surface for induction stovetops, but can still be used on standard stoves, whether gas or electric.

Grilled food needs to be cooked as a single layer, so a wider cooking surface is an advantage. Rectangular or square-shaped pans can accommodate more food in one cooking to save time and energy. You can cook meat or fish and your veggies all at the same time. Food spacing is also important to allow it to cook thoroughly and let it "breathe".
Since most pans are heat-conductive, even the corners have the same temperature as the middle. Also, there are round or rectangular variants commonly used on the Korean grilling. These grill pans have concave surfaces that has a drip conduit in the middle or side to allow the oil to be flushed away.

Proper cleaning of your grill pan will keep it in tiptop condition and will last you a long time. Follow our tips down below to effectively clean your grill pan!
Pour the excess grease while the pan is still warm to make it easier to clean. Please don't flush it down the drain to prevent clogging and dispose of it properly.
To clean the remaining food debris, put a handful of salt (Kosher salt is the best choice because it has larger flakes) and a bit of hot water into the pan. Scrub the pan with a nylon brush and add more salt if needed to remove smaller gunks.
Rinse the pan with hot water while scrubbing it. Pat the pan with a clean paper towel or put it on the stove on low heat to allow complete air drying. It must be completely dry to prevent rusting. Once dry, reseason the pan with a layer of oil to serve as a non-stick coating and remove excess oil.
