Ingredients for Dark Chocolate Cake:

• 90 gr All Purpose Flour ( 1/2 cup + 1 1/2 tbsp)
• 40 gr Unsweetened Cocoa Powder (1/4 cup + 1 tbsp)
• 1 1/2 tsp Baking Powder
• 150 gr Sugar ( 3 /4 cup)
• 3 Egg Yolks
• 4 Egg Whites
• 130 gr Hot Milk ( 1/2 cup + 1 tbsp)
• 70 gr Butter ( 2/3 stick)
• 1 tbsp Coffee

• 350 gr Cold Heavy Cream ( 13 ounces) ( Add 1 third of the cream to your chocolate and the other 2/3 at the end)
• 150 gr White Chocolate ( 5.5 ounces)
• 1 tsp Vanilla
• 1 tbsp Light ( rum Optional )

Procedure:

1. Whisk the egg whites using a hand mixer in a bowl.
2. Add sugar half cup at a time.
3. Set aside your meringue.
4. Put the hot melted butter in the bowl and bloom the cocoa powder with coffee.
5. Add the yolks.
6. Add milk and flour.
7. Add two dollops of the meringue into the batter.
8. Mix the batter with the remaining meringue.
9. Divide the batter into two using two separate buttered and floured cake pans.
10. Bake the cakes in a preheated oven at 160° Celcius or 320° Fahrenheit for around 22 minutes.
11. After baking, let the cakes cool down.
12. Cut the white chocolate bar into small pieces, put it in a measuring cup, and put the heavy cream.
13. Microwave it until it's melted.
14. Let it cool down before adding the remaining heavy cream then add vanilla.
15. Whip it to medium to stiff peaks.
16. Put it in a piping bag and start adding it for the middle layer of cream.
17. Put the second layer of cake and do the second layer of cream.
18. Trim the four sides of the cake.
19. Decorate the cake using strawberries, herbs, and sugar powder for the winter feels.
