Level Up Your Meals With This Simple Vegan Pickle Dish

Are you craving for a healthy side dish to eat with your meals? Check out this very easy recipe from Erwan Heussaff on how to make Atsara or Pickled Green Papaya.


Ingredients:

  • 3 cups papaya
  • 2 teaspoons salt
  • 2 cups carrots
  • 1 cup red bell pepper
  • 1/2 sliced red onion
  • 2 tablespoons ginger
  • 1 long red chili
  • 1 cup water
  • 2 cups coconut vinegar
  • 1 tablespoon crushed garlic
  • 1/2 cup sugar

Procedure:

  1. Cut off the ends of the unripe papaya and slice it in half. Remove the seeds and the fibers in the middle using a scraper or a spoon. Peel the outside skin off. Chop thinly using a knife for harder and longer strands or use a grater or a peeler for thinner pieces.
  2. To draw out moisture, add salt to the papaya and set aside for 30 minutes.
  3. Grate the carrots and julienne the bell pepper and red onion.
  4. Chop the ginger and add red chili for some heat.
  5. Place the papaya in a cheesecloth or muslin cloth to squeeze out the water. Once dried out, mix it in with the other vegetables.
  6. For the brine, add water, vinegar, crushed garlic, and sugar to a pot and bring to a simmer. Once simmering, cook down for 5 minutes.
  7. Put the vegetables in glass jars and add the brine.
  8. Give your Atsara or Pickled Green Papaya a day, or a couple more days to set for more flavor, and enjoy it as a healthy snack or side dish!
