If food traps in a lot of air, this leads to forming bigger ice crystals, which results in cell damage, characterized by mushy and wet food. 


This also leads to freezer burn, which is when food is dehydrated and ends up being shriveled and discolored due to loss of moisture from being exposed to air. You might also see your food covered in ice crystals, which is another tell-tale sign.

When freezing food, use a freezer bag and not a sandwich bag as those are more permeable. Remember, the goal is to keep out air. This also means freezing your food flat to ensure there is as little air as possible. 


Once you have inserted your cuts of meat, zip the bag closed almost all the way but leave an inch of space open. Lay the bag down and try to push the air out starting from one corner until you've reached the open end, then zip the bag closed. 


Don't forget to label it! This also works for liquids such as soup or leftover sabaw. Alternatively, you could wrap the meat in plastic wrap before placing it in a freezer bag. Freezing food flat makes them more organized and accessible!
