Make Puff Pastry With Anna Olson

In this video, professional baker Anna Olson shares her tips on how to make puff pastry. A large rolling pin is important for this recipe as the dough can be quite tough to work with later on. So, prepare for a bit of an arm workout! This recipe yields 3 lbs of dough that you can use anytime for your baked goods.


Ingredients:

Détrempe (Dough):

  • 4 Cups All-Purpose Flour
  • 1 Cup Cool Water
  • 1/2 Cup + 1 Tbsp Room Temperature Unsalted Butter
  • 1 Tbsp Sugar
  • 2 tsp salt
  • 1 Tbsp Lemon Juice or White Vinegar

Beurrage (Butter):

  • 3 Cups Room Temperature Unsalted Butter
  • 1 Cup All-Purpose Flour

Step 1: Making the Beurrage and Détrempe

To make the beurrage, beat the butter and flour in a stand mixer with the paddle until smooth. Line an 8-inch square pan with cling wrap and scrape the butter onto the pan until it is leveled and smooth. Chill it until it is almost firm, about 30-90 minutes. 

To make the détrempe, place flour, water, sugar, salt, lemon juice, and butter in a stand mixer fitted with a dough hook to knead the dough, slowly at first. Once the ingredients are blended, you can increase the speed. Knead the dough for about 4 minutes. Then, shape it into an 8-inch square and let it rest in the fridge for at least an hour.

To laminate the dough, turn out the beurrage onto a well-floured work surface. Using a large rolling pin, roll it into a rectangle and place the dough in the middle of the beurrage. Fold the beurrage over to completely cover the dough and roll it lengthwise, about 20 inches. This will be the first fold. 

Lift the dough to make sure it is not sticking and fold it into thirds, brushing off any excess flour. Rotate the dough 90 degrees and repeat the folding process. Wrap it in cling wrap and let it rest in the fridge for at least 2 hours.

For the second fold, roll the dough lengthwise about 20 inches, brush off excess flour, and fold it into thirds. Rotate it 90 degrees and roll, brush off excess flour, and fold into thirds again. Chill in the fridge for at least 2 hours. 

The final fold only requires you to roll and fold the dough just once. The dough is now complete! But let it rest first for at least 2 hours before you use it for your recipes. When frozen, it can last for up to 3 months.
