Seal the bag and make sure there is no air trapped inside. You can do this with a vacuum sealer. If you're using a zipper-lock bag, lower your bagged steak into a pot of water and let the pressure of the water remove the air from the bag. Once most of the air is removed, seal the bag carefully right above the waterline.

Flip the steak every 15 to 30 seconds until it has developed a nice brown color, about a minute and a half in total. If you did not add butter in the previous step, add it to the skillet about 30 seconds before the steak is done to give it a richer flavor. Then, you can use the torch to char the meat even more.


Use the tongs to sear the edge of the steak until it's completely browned. Transfer the steak to a wire rack set with a rimmed baking sheet underneath. When you're ready to serve, reheat any fat and juices left in the pan until they're sizzling, then pour them over the steak. Enjoy!
