Whip Up Your Own No-Bake Cheesecake

No oven? No problem! You can still make a cheesecake sans the baking. Thanks to Shelly Jaronski of Cookies and Cups, you can follow an easy recipe for the cake base. As for the toppings, it is up to you to decide whether to add fruits, fruit jams, chocolate spreads, candies, or just about anything you like on the cake!


Ingredients:

For the Crust:

  • 1/2 Cup Melted Butter 
  • 1 1/2 Cup Graham Cracker Crumbs
  • 1/4 Cup Granulated Sugar
  • 1/2 Teaspoon Kosher Salt

For the Cheesecake:

  • 2 Cups Cold Heavy Whipping Cream
  • 3 (8-oz) Packages of Cream Cheese (Room Temperature) 
  • 1 Cup Powdered Sugar
  • 2 Teaspoons Vanilla Extract

Instructions:

  1. Coat your 9-inch springform pan or any container with non-stick spray. 
  2. Mix the butter, graham cracker crumbs, sugar, and salt in a large bowl. Press the mixture firmly and evenly into the pan. Place it in the freezer as you make the cheesecake.
  3. Next, whisk the heavy cream until stiff peaks form. Transfer the whipped cream into another bowl and set it aside.
  4. Using the paddle attachment, combine the cream cheese, powdered sugar, and vanilla extract together in the same mixing bowl for 2 minutes on medium speed or until the texture becomes smooth and creamy. 
  5. With a rubber spatula, gently fold in the whipped cream to the cream cheese mixture.
  6. Pour and spread the cheesecake base onto the container with the crust. Place a cover on top and let it chill for at least 4 hours or overnight.
  7. Serve the cheesecake with your chosen toppings and enjoy!
