Ingredients:

  • Leftover Queso de Bola
  • 250 g Sliced Pimento
  • 3/4 Cup of Unsalted Butter
  • 1 1/2 Tbsp of Condensed Milk

Procedure:

  1. Cut your cheese into manageable pieces, then peel off the wax layer of your queso de bola.
  2. Using a grater, shred your cheese in a mixing bowl. Make sure to shred them in the finest hole in the grater.
  3. Drain your pimento peppers and slice them into small bite-sized pieces.
  4. Add the softened unsalted butter and condensed milk to your mixing bowl.
  5. Mix it well until it forms chunks of cheese before adding your sliced pimento.
  6. Again, mix it all together until the pimento peppers are well-incorporated into the cheese.
  7. It might take a while to get the consistency of the spread right. We highly recommend using a hand mixer.
  8. Once you get the desired consistency, transfer them to a clean glass jar and refrigerate.
  9. Serve the spread with toasted bread and coffee.
